Pasta with Kale

1 yellow onion sliced thinly. 1 lb angel hair pasta. 1 lb kale, cleaned and ribs and stems removed, chopped pretty fine. 1/2 tsp crushed red pepper flakes.1 tb capers and 2 tbs of their juice. 1 28 oz. can petite diced tomatoes.1 clove garlic crushed.
Cook pasta according to package directions.While pasta is cooking, put the onion into a very large skillet or saucepan with a small amount of water, (I use a large wok). After onion is soft and transparent, add crushed red pepper flakes, try to cook most of the water out. then add tomatoes and cook for a few minutes, add kale (I chop this in my food processor) [faster than by hand]. When it has wilted until pretty tender, add garlic, stir well, salt to taste, then add the drained pasta and mix well. Serve with grated parmesan cheese if desired.(I use a fake parmesan). Enjoy!!! This is one of our favorite dishes and so easy to make. Fast!
